- 1 cup sharp cheddar cheese

Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a large bowl, mix together the flour, baking powder, baking soda, and salt.
- In another bowl, combine the grated zucchini, cheddar cheese, chives, buttermilk, eggs, honey, melted butter, and lemon juice.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Transfer the batter into the prepared loaf pan and smooth the top.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- If using the glaze, melt butter and mix with honey; brush it on the warm bread.
- Allow the bread to cool for about 10 minutes before transferring it to a wire rack to cool completely.
Notes
For a milder flavor, use mild cheddar cheese. You can also substitute the honey with maple syrup for a different sweetness.
