  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup grated zucchini (about 1 medium)
  • 1 cup sharp cheddar cheese

  • ½ cup buttermilk
  • 2 large eggs
  • ¼ cup honey
  • 2 tablespoons melted butter
  • 1 tablespoon lemon juice
  • 1 tablespoon melted butter (for glaze)
  • 1 teaspoon honey (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a large bowl, mix together the flour, baking powder, baking soda, and salt.
  3. In another bowl, combine the grated zucchini, cheddar cheese, chives, buttermilk, eggs, honey, melted butter, and lemon juice.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Transfer the batter into the prepared loaf pan and smooth the top.
  6. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  7. If using the glaze, melt butter and mix with honey; brush it on the warm bread.
  8. Allow the bread to cool for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

For a milder flavor, use mild cheddar cheese. You can also substitute the honey with maple syrup for a different sweetness.
