Description

This Southern Squash Casserole is a comforting and hearty dish that combines tender yellow squash with a creamy mixture of cheeses and spices, topped with a crunchy layer of butter crackers.

Ingredients

Scale

2 pounds yellow squash sliced ¼ inch thick (about 5 medium sized squash)

¼ cup butter

½ cup diced onion

½ teaspoon garlic powder

¾ teaspoon salt

½ teaspoon black pepper

½ cup sour cream

1 large egg beaten

1 cup shredded cheddar cheese

½ cup grated Parmesan cheese

1 cup butter crackers finely crushed (about 25 crackers)

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, melt the butter over medium heat. Add the diced onion and sauté until translucent.
  • Add the sliced yellow squash to the skillet. Sprinkle with garlic powder, salt, and black pepper. Cook until the squash is tender, about 5-7 minutes.
  • In a mixing bowl, combine the sour cream, beaten egg, cheddar cheese, and Parmesan cheese. Mix well.
  • Add the cooked squash mixture to the bowl and stir until everything is well combined.
  • Transfer the mixture to a greased baking dish and top with crushed butter crackers.
  • Bake in the preheated oven for 30 minutes, or until the top is golden brown.
  • Allow to cool slightly before serving. Enjoy your Southern Squash Casserole!

Notes

For a spicier version, consider adding diced jalapeños or a dash of hot sauce to the mixture. This casserole can also be made ahead and baked just before serving.
