This Southern Squash Casserole is a comforting and hearty dish that combines tender yellow squash with a creamy mixture of cheeses and spices, topped with a crunchy layer of butter crackers.
Ingredients
2 pounds yellow squash sliced ¼ inch thick (about 5 medium sized squash)
¼ cup butter
½ cup diced onion
½ teaspoon garlic powder
¾ teaspoon salt
½ teaspoon black pepper
½ cup sour cream
1 large egg beaten
1 cup shredded cheddar cheese
½ cup grated Parmesan cheese
1 cup butter crackers finely crushed (about 25 crackers)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, melt the butter over medium heat. Add the diced onion and sauté until translucent.
- Add the sliced yellow squash to the skillet. Sprinkle with garlic powder, salt, and black pepper. Cook until the squash is tender, about 5-7 minutes.
- In a mixing bowl, combine the sour cream, beaten egg, cheddar cheese, and Parmesan cheese. Mix well.
- Add the cooked squash mixture to the bowl and stir until everything is well combined.
- Transfer the mixture to a greased baking dish and top with crushed butter crackers.
- Bake in the preheated oven for 30 minutes, or until the top is golden brown.

Notes
