A delicious twist on the classic oatmeal cream pie, this Oatmeal Cream Pie Cake combines the hearty flavor of oatmeal with a rich vanilla frosting and a decadent white chocolate glaze.

- 4 cups powdered sugar
- 2 tbsp heavy cream
- 2 tsp vanilla extract
- 1 tsp vanilla bean paste
- 1 cup white chocolate chips
- 1/4 cup + 3 tbsp heavy cream
- white food coloring

Instructions
- Preheat your oven to 350°F (175°C) and grease and flour three 9-inch round cake pans.
- In a medium saucepan, bring water to a boil, then stir in quick cook oats. Remove from heat and let sit for 30 minutes.
- In a large bowl, combine flour, cinnamon, salt, nutmeg, and baking soda; set aside.
- In another bowl, cream the butter, granulated sugar, and brown sugar together until light and fluffy. Add in the eggs one at a time, beating well after each addition, then mix in the sour cream and vanilla extract.
- Gradually mix in the dry ingredients and the soaked oats until just combined.
- Divide the batter evenly among the prepared cake pans and bake for 30 minutes or until a toothpick inserted comes out clean. Let cool in pans for 10 minutes before transferring to wire racks to cool completely.
- For the frosting, beat the room temperature butter until creamy, then gradually add powdered sugar, heavy cream, vanilla extract, and vanilla bean paste until well combined and fluffy.
- For the glaze, melt white chocolate chips with heavy cream over a double boiler or microwave until smooth. Stir in white food coloring if desired.
- Once the cakes are cooled, frost the top of each layer with vanilla frosting, stacking them, then pour the white chocolate glaze on top allowing it to drizzle down the sides.
- Decorate with oatmeal cream pie cookies and serve. Enjoy!
Notes
Make sure all the ingredients are at room temperature for better mixing and texture. The glaze can be adjusted in consistency with more or less cream as needed.
