  • 80% lean
  • 1 small onion
  • diced
  • ½ cup bell pepper
  • diced
  • 3 cloves garlic
  • diced
  • 1.25 oz. packet chili seasoning mix
  • 1 tablespoon tomato paste
  • 8 oz. tomato sauce
  • 14.5 oz. can diced tomatoes
  • undrained
  • ½ cup chicken broth
  • 1 15 oz. can kidney beans
  • drained
  • 2 cups macaroni
  • uncooked
  • 2 tablespoons butter
  • 2 tablespoons flour
  • ½ cup heavy cream
  • 1 cup milk
  • ½ teaspoon mustard powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon each: salt/pepper
  • ½ teaspoon hot sauce
  • 1 ½ cups cheddar cheese
  • shredded
  • 1 ½ cups cheddar cheese
  • shredded
  • Fresh Parsley
  • to garnish

Instructions

  1. In a large skillet over medium heat, brown the ground beef, onion, bell pepper, and garlic until the meat is no longer pink.
  2. Stir in the chili seasoning mix, tomato paste, tomato sauce, diced tomatoes, chicken broth, and kidney beans. Simmer for about 15 minutes.
  3. In a separate pot, cook the macaroni according to package instructions; drain and set aside.
  4. In a saucepan, melt butter over medium heat, then whisk in flour. Slowly add heavy cream and milk, whisking until smooth.
  5. Stir in mustard powder, onion powder, salt, pepper, and hot sauce, followed by cheddar cheese until melted and creamy.
  6. Combine the chili mixture with the cooked macaroni, then stir in the cheese sauce until evenly mixed.
  7. Transfer to a baking dish, top with remaining 1 ½ cups of cheddar cheese, and bake at 350°F (175°C) for 10-15 minutes or until cheese is bubbly and golden.
  8. Garnish with fresh parsley and serve warm.

Notes

Feel free to customize the chili seasoning or add your favorite toppings such as jalapeños or sour cream.
