- 3 medium zucchini (or 2 zucchini and 1 yellow squash)
- grated
- 2/3 cup panko breadcrumbs
- 1/2 cup sharp cheddar cheese
- finely grated
- 2 eggs
- 1 tsp cornstarch
- 3/4 tsp kosher sea salt
- 1/2 teaspoon garlic powder
- 1/4 tsp onion powder
- 1/4 tsp ground black pepper
- 1/8 tsp dried parsley
- 1/8 tsp paprika
- avocado oil or grape seed oil or pam
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the grated zucchini with a pinch of salt and let it sit for 10 minutes to draw out excess moisture.
- After 10 minutes, drain the zucchini and squeeze out as much liquid as possible using a clean kitchen towel.
- In the same bowl, add the panko breadcrumbs, sharp cheddar cheese, eggs, cornstarch, garlic powder, onion powder, black pepper, dried parsley, and paprika. Mix until well combined.
- Form the mixture into small tots and place them on the prepared baking sheet. Drizzle or spray with avocado oil.
- Bake for 25-30 minutes or until golden brown and crispy, flipping halfway through for even cooking.
- Serve hot, and enjoy your cheesy zucchini tots!
Notes
For extra crispiness, make sure to squeeze out all excess liquid from the zucchini and avoid overcrowding the baking sheet.
