Ingredients

  • 3 medium zucchini (or 2 zucchini and 1 yellow squash)
  • grated
  • 2/3 cup panko breadcrumbs
  • 1/2 cup sharp cheddar cheese
  • finely grated
  • 2 eggs
  • 1 tsp cornstarch
  • 3/4 tsp kosher sea salt
  • 1/2 teaspoon garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp ground black pepper
  • 1/8 tsp dried parsley
  • 1/8 tsp paprika
  • avocado oil or grape seed oil or pam

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the grated zucchini with a pinch of salt and let it sit for 10 minutes to draw out excess moisture.
  3. After 10 minutes, drain the zucchini and squeeze out as much liquid as possible using a clean kitchen towel.
  4. In the same bowl, add the panko breadcrumbs, sharp cheddar cheese, eggs, cornstarch, garlic powder, onion powder, black pepper, dried parsley, and paprika. Mix until well combined.
  5. Form the mixture into small tots and place them on the prepared baking sheet. Drizzle or spray with avocado oil.
  6. Bake for 25-30 minutes or until golden brown and crispy, flipping halfway through for even cooking.
  7. Serve hot, and enjoy your cheesy zucchini tots!

Notes

For extra crispiness, make sure to squeeze out all excess liquid from the zucchini and avoid overcrowding the baking sheet.
