Instructions
- Heat the olive oil or butter in a large pot over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the garlic and cook for an additional 1-2 minutes until fragrant.
- Add the chopped zucchini, salt, pepper, and thyme (if using), stirring to combine.
- Pour in the broth and bring to a boil. Reduce heat and simmer for about 20 minutes until zucchini is tender.
- Remove from heat and blend the soup until smooth using an immersion blender or a regular blender.
- Return the soup to the pot, stir in the heavy cream or sour cream, and heat gently.
- Serve hot, garnished with olive oil, sour cream, or parsley as desired.
