Description
Zucchini Rollatini is a delightful dish featuring thinly sliced zucchini rolled around a creamy ricotta and sausage filling, baked to perfection.

- 3 small/medium zucchini
- sliced into 28 very thin slices
- 1 cup ricotta cheese
- 1/2 pound Italian sausage
- ground
- 1/2 cup mozzarella cheese
- shredded
- 1/2 cup parmesan cheese
- grated
- 1 whole egg
- 1/2 teaspoon
- 2 tablespoons fresh basil
- chopped
- 1 tablespoon fresh parsley
- chopped
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, cook the ground Italian sausage until fully browned; drain excess fat.
- In a bowl, combine the ricotta cheese, mozzarella cheese, parmesan cheese, cooked sausage, egg, fresh basil, fresh parsley, salt, and black pepper.
- Lay out a slice of zucchini, place a spoonful of the filling at one end, and roll it up. Repeat with remaining slices and filling.
- Place the zucchini rolls in a baking dish and pour any remaining cheese mixture on top.
- Cover with foil and bake for 20 minutes, then remove the foil and bake for an additional 10 minutes until golden and bubbly.
- Let cool for a few minutes before serving. Enjoy your Zucchini Rollatini!
Notes
For extra flavor, consider adding a pinch of red pepper flakes to the sausage while cooking.
