Description

Zucchini Rollatini is a delightful dish featuring thinly sliced zucchini rolled around a creamy ricotta and sausage filling, baked to perfection.


Ingredients

  • 3 small/medium zucchini
  • sliced into 28 very thin slices
  • 1 cup ricotta cheese
  • 1/2 pound Italian sausage
  • ground
  • 1/2 cup mozzarella cheese
  • shredded
  • 1/2 cup parmesan cheese
  • grated
  • 1 whole egg
  • 1/2 teaspoon
  • 2 tablespoons fresh basil
  • chopped
  • 1 tablespoon fresh parsley
  • chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, cook the ground Italian sausage until fully browned; drain excess fat.
  3. In a bowl, combine the ricotta cheese, mozzarella cheese, parmesan cheese, cooked sausage, egg, fresh basil, fresh parsley, salt, and black pepper.
  4. Lay out a slice of zucchini, place a spoonful of the filling at one end, and roll it up. Repeat with remaining slices and filling.
  5. Place the zucchini rolls in a baking dish and pour any remaining cheese mixture on top.
  6. Cover with foil and bake for 20 minutes, then remove the foil and bake for an additional 10 minutes until golden and bubbly.
  7. Let cool for a few minutes before serving. Enjoy your Zucchini Rollatini!

Notes

For extra flavor, consider adding a pinch of red pepper flakes to the sausage while cooking.
