Ingredients
2 large zucchini
ends trimmed
2 tablespoons extra-virgin olive oil

12 cherry tomatoes
halved
2 cloves garlic
minced
1 teaspoon kosher salt
1 teaspoon Italian seasoning
½ teaspoon freshly ground black pepper
4 cups baby spinach
½ cooked chicken breast
chopped
½ cup frozen peas
2 lemons
juiced
1 lemon
zested
Instructions
- Spiralize the zucchini into noodles and set aside.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat.
- Add the garlic and cook until fragrant, about 30 seconds.
- Stir in the cherry tomatoes, salt, Italian seasoning, and pepper; cook until the tomatoes soften, about 5 minutes.
- Add the chicken, peas, and baby spinach, cooking until the spinach wilts.
- Toss in the zucchini noodles and cook for an additional 3-4 minutes until tender.
- Finally, stir in the lemon juice and zest, and drizzle with the remaining olive oil before serving.
