These Zucchini Fritters are a delicious way to enjoy a high-protein, low-carb meal, made effortlessly in an air fryer.
Ingredients

- 2 medium zucchini (about 400g)
- grated
- 1 teaspoon salt (for drawing out moisture)
- 2 large eggs
- 1/3 cup chickpea flour
- 2 tablespoons grated Parmesan
- 2 cloves garlic
- minced
- 1/4 teaspoon black pepper
- 1/2 teaspoon onion powder
- 1 tablespoon fresh parsley
- chopped
- Olive oil spray
Instructions
- Grate the zucchini and place it in a bowl. Sprinkle with salt and let it sit for 10 minutes to draw out moisture.
- After 10 minutes, squeeze the grated zucchini to remove excess liquid.
- In a mixing bowl, combine the squeezed zucchini, eggs, chickpea flour, Parmesan, garlic, black pepper, onion powder, and parsley. Mix well.
- Preheat the air fryer to 375°F (190°C).
- Form the mixture into fritters and place them in the air fryer basket. Spray lightly with olive oil.
- Cook for 12-15 minutes, flipping halfway through, until golden brown and crispy.
Notes
Ensure to squeeze out as much moisture from the zucchini as possible for crispy fritters.
