- 2 cups grated zucchini
- 1 cup cottage cheese
- 2 eggs
- 1/4 cup breadcrumbs
- 1/3 cup grated pecorino cheese
- 2 scallions
- 1 tsp Italian herb blend
- salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the grated zucchini, cottage cheese, eggs, breadcrumbs, grated pecorino cheese, chopped scallions, Italian herb blend, salt, and pepper. Mix thoroughly until well combined.
- Using a spoon or cookie scoop, form the mixture into small fritters and place them on the prepared baking sheet.
- Bake in the preheated oven for 25-30 minutes, or until golden brown and crispy on the outside.
- Serve warm with Lazy Tzatziki or your favorite dip.
Notes
Make sure to squeeze out excess liquid from the zucchini to ensure crispy fritters. They can also be pan-fried if you prefer a different texture.
