Ingredients

  • 2 cups grated zucchini
  • 1 cup cottage cheese
  • 2 eggs
  • 1/4 cup breadcrumbs
  • 1/3 cup grated pecorino cheese
  • 2 scallions
  • 1 tsp Italian herb blend
  • salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the grated zucchini, cottage cheese, eggs, breadcrumbs, grated pecorino cheese, chopped scallions, Italian herb blend, salt, and pepper. Mix thoroughly until well combined.
  3. Using a spoon or cookie scoop, form the mixture into small fritters and place them on the prepared baking sheet.
  4. Bake in the preheated oven for 25-30 minutes, or until golden brown and crispy on the outside.
  5. Serve warm with Lazy Tzatziki or your favorite dip.

Notes

Make sure to squeeze out excess liquid from the zucchini to ensure crispy fritters. They can also be pan-fried if you prefer a different texture.
