  • Shredded zucchini
  • White whole wheat unbleached flour
  • Baking powder
  • Ground ginger
  • Cinnamon
  • Baking soda
  • Cream cheese frosting with lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a large bowl, mix together the brown sugar, eggs, canola oil (or coconut oil), honey, and vanilla until well combined.
  3. Stir in the shredded carrot and zucchini until evenly combined.
  4. In another bowl, whisk together the flour, baking powder, ground ginger, cinnamon, and baking soda.
