Description

This Zucchini Cake is a delightful dessert that combines the wholesome goodness of grated zucchini with a rich, moist cake and a luscious cream cheese frosting.


Ingredients

  • 3/4 cup granulated sugar
  • 3/4 cup packed light brown sugar
  • 1/2 cup crushed pineapple
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1/3 cup sour cream
  • 2 cups grated zucchini
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 8 ounces cream cheese
  • 6 tablespoons butter
  • 2 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • cinnamon sugar for sprinkling on top (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, mix oil, granulated sugar, and brown sugar until combined.
  3. Add crushed pineapple, eggs, and vanilla extract; mix until smooth.
  4. Stir in sour cream and grated zucchini until well combined.
  5. In another bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  6. Gradually add the dry ingredients to the wet mixture, stirring just until combined.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  9. While the cake cools, prepare the frosting by beating cream cheese and butter until smooth; gradually add powdered sugar and vanilla extract, mix until creamy.
  10. Once the cake is completely cooled, frost it generously and sprinkle with cinnamon sugar if desired.

Notes

For best flavor, let the cake cool completely before frosting. You can also add nuts or chocolate chips to the batter for extra texture.
