- 1 cup almond butter
- 1/4 cup maple syrup
- 1/2 cup coconut sugar or brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/3 cup + 2 tablespoons cocoa powder
- 1 teaspoon baking powder
- 1 cup shredded zucchini
- 1/2 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
- In a large bowl, mix together the almond butter, maple syrup, coconut sugar (or brown sugar), eggs, and vanilla extract until well combined.
- In another bowl, whisk together the cocoa powder, baking powder, and shredded zucchini, then fold this mixture into the wet ingredients until just combined.
- Gently stir in the chocolate chips, reserving a few to sprinkle on top if desired.
- Pour the batter into the prepared baking pan and smooth the top, then bake for 30 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.
- Allow to cool in the pan for at least 10 minutes before lifting out and cutting into squares for serving.
Notes
Store leftovers in an airtight container to keep them moist. These brownies can also be frozen for later enjoyment!
