Description

This moist and flavorful Zucchini Bread is packed with fresh grated zucchini and warm spices, making it a perfect treat for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 ½ teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 tablespoon cinnamon
  • 1 teaspoon salt
  • 2 cups grated zucchini (about 2 small)
  • ¾ cup vegetable oil
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 1 ½ cups chopped walnuts (or pecans)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, combine flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, whisk together grated zucchini, vegetable oil, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fold in the chopped walnuts or pecans.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For extra flavor, you can add chocolate chips or dried fruits to the batter.
