  • peeled and segmented
  • 4 large fuji apples
  • cored and diced
  • 2 pomegranates
  • arils removed
  • 1 cup granulated sugar
  • 1 cup water
  • 2 cinnamon sticks
  • 1 vanilla bean
  • split down the middle and seeds scraped

Instructions

  1. In a large bowl, combine the mandarin orange segments, diced fuji apples, and pomegranate arils.
  2. In a saucepan, combine sugar, water, cinnamon sticks, and vanilla bean along with the seeds; bring to a boil over medium heat.
  3. Reduce heat and let simmer for about 20 minutes until the syrup thickens slightly.
  4. Remove from heat and let cool before drizzling over the fruit salad.
