- peeled and segmented
- 4 large fuji apples
- cored and diced
- 2 pomegranates
- arils removed
- 1 cup granulated sugar
- 1 cup water
- 2 cinnamon sticks
- 1 vanilla bean

Instructions
- In a large bowl, combine the mandarin orange segments, diced fuji apples, and pomegranate arils.
- In a saucepan, combine sugar, water, cinnamon sticks, and vanilla bean along with the seeds; bring to a boil over medium heat.
- Reduce heat and let simmer for about 20 minutes until the syrup thickens slightly.
- Remove from heat and let cool before drizzling over the fruit salad.
