- 1 tablespoon fresh ginger

Instructions
- In a medium saucepan, combine the dried elderberries, water, cinnamon sticks, cloves, and fresh ginger (if using).
- Bring the mixture to a boil, then reduce heat and let it simmer uncovered for about 30 minutes.
- After simmering, remove from heat and let it cool slightly.
- Strain the syrup through a fine mesh strainer into a clean jar, discarding the solids.
- Once the syrup has cooled to room temperature, stir in the raw honey until fully dissolved.
- Store in the refrigerator for up to 2-3 weeks.
