Instructions
- In a saucepan, combine the heavy cream, white chocolate, butter, vanilla extract, and sea salt over medium heat until melted and smooth.
- Remove from heat and let the mixture cool slightly before refrigerating for about 2 hours until firm.
- Meanwhile, blend fresh raspberries with granulated sugar to create a smooth raspberry puree.
- Once the truffle base is firm, scoop out small portions and roll them into balls.
- Using a toothpick, dip each truffle into raspberry puree, swirling to create a marbled effect.
- Roll each truffle in crushed freeze-dried raspberries until fully coated.
- Chill the truffles for another 30 minutes before serving.
