  • 1 medium yellow onion diced
  • 2 cloves garlic minced
  • 2 (14 oz.) cans low-sodium chicken broth about 3.5 cups
  • 2 (4 oz.) cans diced green chiles
  • 1 (15 oz.) can whole kernel corn drained
  • 2 (15 oz.) cans white beans cannellini or great Northern beans drained and rinsed
  • 1 teaspoon cumin
  • 1/2 teaspoon EACH chili powder oregano paprika ground coriander
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 8 oz. cream cheese softened and cubed
  • 2 cups shredded rotisserie chicken or cooked chicken about 1 lb.
  • 1 tablespoon lime juice
  • 1 tablespoon fresh cilantro chopped
  • Fresh chopped cilantro
  • A dollop of sour cream
  • Monterrey Jack or Pepper Jack cheese shredded
  • Tortilla strips
  • Sliced avocados
  • Sliced jalapenos

Instructions

  1. In a large pot over medium heat, sauté the diced onion and minced garlic until translucent.
  2. Add the chicken broth, diced green chiles, corn, and white beans to the pot; stir to combine.
  3. Season with cumin, chili powder, oregano, paprika, ground coriander, cayenne pepper, salt, and pepper.
  4. Bring the chili to a simmer and let it cook for about 20 minutes.
  5. Stir in the cream cheese and shredded chicken until well combined and creamy.
  6. Finish with lime juice and chopped cilantro before serving.

Notes

Feel free to adjust the spices according to your taste. This chili can also be made in a slow cooker for added convenience.
