Ingredients

  • 4 small boneless skinless chicken breasts
  • about 1 1/2 pounds
  • Kosher salt and freshly ground black pepper

  • 1 ½ tablespoons canola oil
  • 2 tablespoons unsalted butter
  • divided
  • 3 cloves garlic
  • minced
  • ½ medium shallot
  • diced
  • 2 teaspoons chopped fresh rosemary
  • 1 tablespoon all-purpose flour
  • 1 cup chicken stock
  • 2 tablespoons freshly squeezed lemon juice

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. In a large skillet over medium-high heat, heat the canola oil and 1 tablespoon of butter.
  3. Add the chicken breasts and cook for about 5-6 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.
  4. In the same skillet, reduce heat to medium and add the garlic, shallot, and rosemary. Sauté for about 2 minutes until aromatic.
  5. Sprinkle the flour over the mixture and stir for 1 minute, then gradually pour in the chicken stock, stirring constantly until the sauce thickens.
  6. Stir in the lemon juice and remaining tablespoon of butter until melted.
  7. Return the chicken to the skillet, spooning the sauce over the breasts to coat.
  8. Serve warm, garnished with extra rosemary if desired.
