- 4 small boneless skinless chicken breasts
- about 1 1/2 pounds
- Kosher salt and freshly ground black pepper

- 1 ½ tablespoons canola oil
- 2 tablespoons unsalted butter

- 3 cloves garlic

- ½ medium shallot
- diced
- 2 teaspoons chopped fresh rosemary
- 1 tablespoon all-purpose flour
- 1 cup chicken stock
- 2 tablespoons freshly squeezed lemon juice
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- In a large skillet over medium-high heat, heat the canola oil and 1 tablespoon of butter.
- Add the chicken breasts and cook for about 5-6 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.
- In the same skillet, reduce heat to medium and add the garlic, shallot, and rosemary. Sauté for about 2 minutes until aromatic.
- Sprinkle the flour over the mixture and stir for 1 minute, then gradually pour in the chicken stock, stirring constantly until the sauce thickens.
- Stir in the lemon juice and remaining tablespoon of butter until melted.
- Return the chicken to the skillet, spooning the sauce over the breasts to coat.
- Serve warm, garnished with extra rosemary if desired.
Notes
For a complete meal, serve with rice or steamed vegetables. You can also add capers for an extra zing.
