Ingredients
Small Seedless Watermelon
Shallots
Mint

Feta Cheese – Use the one in the brine.
Yellow Peaches
Persian Cucumbers
Red Wine Vinegar
Garlic
Dried Oregano

Instructions
- Begin by cutting the watermelon into bite-sized cubes and placing them in a large bowl.
- Slice the yellow peaches and remove the pits, adding them to the bowl with the watermelon.
- Thinly slice the shallots and cucumbers and add them to the bowl.
- Chop the fresh mint leaves and add them to the salad.
- In a separate bowl, whisk together olive oil, red wine vinegar, minced garlic, dried oregano, salt, and pepper to create the dressing.
- Drizzle the dressing over the salad ingredients and gently toss to combine.
- Crumble feta cheese over the top before serving.
Notes
For extra flavor, let the salad sit for 10 minutes before serving to allow the dressing to meld with the fruits.
