Instructions

  • Begin by cutting the watermelon into bite-sized cubes and placing them in a large bowl.
  • Slice the yellow peaches and remove the pits, adding them to the bowl with the watermelon.
  • Thinly slice the shallots and cucumbers and add them to the bowl.
  • Chop the fresh mint leaves and add them to the salad.
  • In a separate bowl, whisk together olive oil, red wine vinegar, minced garlic, dried oregano, salt, and pepper to create the dressing.
  • Drizzle the dressing over the salad ingredients and gently toss to combine.
  • Crumble feta cheese over the top before serving.
