Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 medium onion
  • diced
  • 4 medium carrots
  • peeled and sliced
  • 3 celery ribs
  • sliced
  • 4 garlic cloves
  • minced
  • 2 teaspoons Italian seasoning
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 3 Yukon gold potatoes
  • peeled and diced
  • 1 ½ cups chopped fresh green beans
  • 2 (14.5 ounce) cans diced tomatoes
  • 2 bay leaves
  • 6 to 8 cups low-sodium vegetable broth
  • 1 cup frozen corn
  • 1 cup frozen peas
  • 2 to 3 tablespoons fresh lemon juice
  • ¼ cup chopped fresh parsley

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery, and sauté until the vegetables begin to soften, about 5-7 minutes.
  2. Add the minced garlic, Italian seasoning, kosher salt, and black pepper. Stir and cook for another minute until fragrant.
  3. Stir in the diced Yukon gold potatoes and green beans, followed by the diced tomatoes and bay leaves.
  4. Pour in the vegetable broth, bringing the mixture to a boil. Reduce heat and let it simmer for 20-25 minutes, or until the vegetables are tender.
  5. Add the frozen corn and peas, and simmer for an additional 5-10 minutes.
  6. Remove the bay leaves, and stir in fresh lemon juice and parsley before serving.
