Instructions
- In a mixing bowl, whisk together the all-purpose flour, eggs, milk, water, melted butter, vanilla extract, and salt until smooth to make the crêpe batter.
- Heat a non-stick skillet over medium heat and add a small amount of butter to coat the bottom.
- Pour a ladleful of crêpe batter into the skillet, swirling to cover the base evenly.
- Cook for about 1-2 minutes until the edges lift and the bottom is lightly golden, then flip and cook for another minute. Repeat until all batter is used.
- For the filling, whip the heavy cream until soft peaks form, then fold in mascarpone or cream cheese, speculoos spread, powdered sugar, and vanilla extract until fully combined.
- Layer the crêpes with the cream filling in between each layer on a serving platter, finishing with a layer of cream on top.
- Chill the crêpe cake in the refrigerator for at least 1 hour before slicing and serving.
