Ingredients

  • 225 g unsalted butter
  • 250 g granulated sugar
  • 1 large egg
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 310 g all-purpose flour
  • 500 g whole milk
  • 100 g granulated sugar
  • 80 g egg yolks
  • 25 g cornstarch
  • 25 g all-purpose flour
  • 2 teaspoons vanilla bean paste
  • 50 g unsalted butter
  • 50 g demerara sugar

Instructions

  1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the unsalted butter and granulated sugar until light and fluffy.
  3. Add the egg, egg yolk, and vanilla extract, mixing until well combined.
  4. Gradually incorporate the all-purpose flour until a soft dough forms.
  5. Chill the dough for about 30 minutes in the refrigerator.
  6. While the dough chills, prepare the pastry cream by heating the whole milk and 100 g of sugar in a saucepan until just simmering.
  7. In a separate bowl, whisk together the egg yolks, cornstarch, and flour until smooth.
  8. Slowly add the hot milk mixture to the egg mixture while whisking, then transfer back to the saucepan.
  9. Cook over medium heat, stirring constantly, until thickened. Remove from heat and stir in the vanilla bean paste.
  10. Once the cookie dough is chilled, scoop tablespoons of dough onto the prepared baking sheet and create an indentation in the center of each cookie.
  11. Fill each indentation with a spoonful of pastry cream.
  12. Bake for 12-15 minutes until cookies are set and lightly golden.
  13. Cool the cookies slightly on the baking sheet before transferring to a wire rack.
  14. In a small bowl, mix the softened butter and demerara sugar; sprinkle it on top of each cookie.
  15. Use a kitchen torch to caramelize the sugar topping until golden and crispy. Serve warm.

Notes

For a deeper flavor, use brown sugar in the cookie base. Ensure the pastry cream is well-cooled before filling the cookies.
