- 1/2 cup unsalted butter

- 1 teaspoon vanilla extract

- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground allspice
- 1/4 teaspoon ground cloves
- 1/2 teaspoon salt
- 1 cup powdered sugar (optional for glaze)
- 2 tablespoons pure maple syrup (optional for glaze)
- 1–2 teaspoons reduced apple cider (optional for glaze
Instructions
- In a saucepan, simmer the apple cider over medium heat until it’s reduced by half. Let it cool.
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until fluffy.
- Add the eggs and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the flour, baking soda, baking powder, spices, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with the reduced apple cider until just combined.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them apart.
- Bake for 12-15 minutes or until the edges are lightly golden. Let them cool on a wire rack.
- For the optional glaze, whisk together powdered sugar, maple syrup, and reduced apple cider until smooth, then drizzle over the cooled cookies.
Notes
For added flavor, you can replace the common spices with your favorite pumpkin spice mix. For a thicker glaze, use more powdered sugar.
