Description

This hearty Tuscan White Bean Soup combines mild Italian sausage, fresh vegetables, and creamy beans for a comforting meal perfect for any day.


Ingredients

  • 1 pound mild Italian sausage
  • 1 large yellow onion diced (about 1 ½ cups)
  • 3 ribs celery diced
  • 2 large carrots sliced into rounds
  • 2 teaspoons garlic minced
  • 1 tablespoon tomato paste
  • 1 teaspoon Italian seasoning
  • ½ teaspoon crushed red pepper
  • ½ teaspoon ground black pepper
  • 4 cups (32 ounces) chicken broth
  • 2 cans (15.5 ounces each) Great Northern beans drained and rinsed
  • 2 cups (60 g) fresh baby spinach
  • ½ cup (119 g) heavy whipping cream
  • parsley chopped for garnish

Instructions

  1. In a large pot, cook the Italian sausage over medium heat until browned, breaking it up with a spoon as it cooks.
  2. Add the onion, celery, and carrots to the pot, cooking until the vegetables are softened, about 5-7 minutes.
  3. Stir in the garlic, tomato paste, Italian seasoning, crushed red pepper, and black pepper, cooking for an additional minute.
  4. Pour in the chicken broth and bring the mixture to a boil.
  5. Add the Great Northern beans and reduce heat, letting simmer for 15-20 minutes.
  6. Stir in the fresh spinach and heavy whipping cream, cooking until the spinach wilts.
  7. Serve hot, garnished with chopped parsley.

Notes

This soup can be stored in the refrigerator for up to 3 days and also freezes well. Adjust the spice level by modifying the amount of crushed red pepper.
