This hearty Tuscan White Bean Soup combines mild Italian sausage, fresh vegetables, and creamy beans for a comforting meal perfect for any day.

- 1 pound mild Italian sausage
- 1 large yellow onion diced (about 1 ½ cups)
- 3 ribs celery diced
- 2 large carrots sliced into rounds
- 2 teaspoons garlic minced
- 1 tablespoon tomato paste
- 1 teaspoon Italian seasoning
- ½ teaspoon crushed red pepper
- ½ teaspoon ground black pepper
- 4 cups (32 ounces) chicken broth
- 2 cans (15.5 ounces each) Great Northern beans drained and rinsed
- 2 cups (60 g) fresh baby spinach
- ½ cup (119 g) heavy whipping cream
- parsley chopped for garnish
Instructions
- In a large pot, cook the Italian sausage over medium heat until browned, breaking it up with a spoon as it cooks.
- Add the onion, celery, and carrots to the pot, cooking until the vegetables are softened, about 5-7 minutes.
- Stir in the garlic, tomato paste, Italian seasoning, crushed red pepper, and black pepper, cooking for an additional minute.
- Pour in the chicken broth and bring the mixture to a boil.
- Add the Great Northern beans and reduce heat, letting simmer for 15-20 minutes.
- Stir in the fresh spinach and heavy whipping cream, cooking until the spinach wilts.
- Serve hot, garnished with chopped parsley.
Notes
This soup can be stored in the refrigerator for up to 3 days and also freezes well. Adjust the spice level by modifying the amount of crushed red pepper.
