- 6 tbsp (90ml) heavy whipping cream
- 24 oz (678g) Challenge cream cheese

- 1 cup (144g) light brown sugar
- 3 tbsp (24g) all-purpose flour
- 1 cup (230g) sour cream
- 1 1/2 tbsp vanilla extract
- 3 large eggs
- 2 oz (1/3 cup | 58g) semi-sweet chocolate chips
- 3 tbsp (45ml) heavy whipping cream
Instructions
- Preheat the oven to 325°F (163°C).
- In a mixing bowl, combine graham cracker crumbs, melted butter, and brown sugar to make the crust. Press into the bottom of a springform pan.
- In a saucepan, cook sugar over medium heat until it melts and turns amber. Remove from heat; add butter and heavy cream, stirring until smooth. Set aside to cool.
- In another bowl, melt the semi-sweet chocolate chips with 6 tablespoons of heavy cream and set aside to cool.
- In a large bowl, beat cream cheese and light brown sugar until smooth. Add flour, sour cream, and vanilla extract, mixing well.
- Add eggs one at a time, mixing on low until just combined. Stir in melted chocolate and pecan chips.
- Pour the filling into the crust and bake for 30 minutes or until the center is set. Allow to cool.
- Drizzle with cooled caramel sauce and refrigerate for a few hours before serving.
- For the chocolate drizzle, melt 2 oz of semi-sweet chocolate chips with 3 tablespoons of heavy cream, stir until smooth, and drizzle over the cheesecake before serving.
