1 cup heavy whipping cream

1/4 cup powdered sugar

1/3 cup toasted shredded coconut

Fresh mint leaves (optional for garnish)


Instructions

  • In a mixing bowl, whip the chilled coconut milk until fluffy and set aside.
  • In another bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
  • Gently fold the coconut cream into the whipped cream until well combined.
  • In serving glasses or a trifle dish, layer cubed pound cake, diced mangoes, and the coconut whipped cream mixture.
  • Repeat the layers until all ingredients are used, finishing with the coconut cream on top.
