1 store-bought pound cake or sponge cake
cubed
1 can (13.5 oz) full-fat coconut milk (chilled overnight)
1 cup heavy whipping cream
1/4 cup powdered sugar
1/2 tsp vanilla extract
1/3 cup toasted shredded coconut
Fresh mint leaves (optional for garnish)
Instructions
- In a mixing bowl, whip the chilled coconut milk until fluffy and set aside.
- In another bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
- Gently fold the coconut cream into the whipped cream until well combined.
- In serving glasses or a trifle dish, layer cubed pound cake, diced mangoes, and the coconut whipped cream mixture.
- Repeat the layers until all ingredients are used, finishing with the coconut cream on top.
- Sprinkle the toasted shredded coconut over the top and garnish with fresh mint leaves if desired.
Notes
