Ingredients
2 1/2 cups graham crackers crumbs
1/4 cup dark brown sugar
1 teaspoon cinnamon
1 stick melted butter
1–2 tablespoons egg whites
2 14 ounce cans sweetened condensed milk
1 cup of key lime juice
8 egg yolks
1/2 cup sour cream
8 oz cream cheese
1/2 cup sweetened condensed milk
1/4 cup key lime juice
1/4 cup sour cream
2 tablespoons granulated sugar
1 1/2 cups heavy cream
2 tablespoons sugar
2 tablespoons key lime juice
Instructions
- Preheat your oven to 350°F (175°C). In a large bowl, combine graham cracker crumbs, dark brown sugar, cinnamon, and melted butter. Mix until the texture resembles wet sand.
- Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan. Bake for 8-10 minutes or until set. Remove from oven and let cool.
- In a separate bowl, whisk together sweetened condensed milk, key lime juice, egg yolks, and sour cream until smooth. Pour this mixture into the cooled crust and bake for another 15 minutes. Let cool at room temperature.
- For the chilled layer, beat softened cream cheese until smooth. Gradually mix in sweetened condensed milk, key lime juice, sour cream, and granulated sugar until combined.
- Spread the chilled cream cheese mixture over the baked layer. Refrigerate for at least 4 hours or overnight to set.
- For the whipped layer, whip the heavy cream until soft peaks form, then add sugar and key lime juice, continuing to beat until stiff peaks form.
- Once the chilled layer has set, top it with the whipped layer. Serve chilled and enjoy your delicious Triple Decker Key Lime Pie!
