Description
Torta del Nonno, or Grandfather’s Cake, is a rich and creamy dessert enriched with chocolate pastry cream and a delightful chocolate pie dough, perfect for any special occasion.

- 1 cup cream (whole
- heavy or whipping cream at least 30% fat content)
- 1 cup milk (whole/heavy milk)
- 5 large egg yolks
- 10 tablespoons granulated sugar
- 1 teaspoon vanilla extract
- 3½ tablespoons all purpose flour
- 2½ ounces dark chocolate (good quality
- I use one with 52% cocoa)
- 2¼ cups all purpose flour
- 1 pinch salt (If using unsalted butter then add ¼ teaspoon of salt)
- ½ teaspoon baking powder
- ½ cup granulated sugar
- 2 tablespoons unsweetened dutch processed cocoa (sifted)
- 1 large egg (room temperature)
- 1 large egg yolk (room temperature)
- ¾ cup butter cubed (room temperature)
Instructions
- In a medium saucepan, heat the cream and milk over medium heat until just steaming.
- In a separate bowl, whisk together the egg yolks, sugar, vanilla extract, and flour until smooth.
- Slowly pour the hot cream mixture into the egg mixture, whisking constantly.
- Return the mixture to the saucepan over medium heat and cook, stirring constantly, until it thickens. Remove from heat and stir in chopped dark chocolate until melted and smooth.
- For the chocolate pie dough, whisk together flour, salt, baking powder, sugar, and cocoa powder in a large bowl.
- Cut in the butter until the mixture resembles coarse crumbs.
- Add the large egg and egg yolk, mixing until a dough forms. Wrap in plastic wrap and refrigerate for 30 minutes.
- Preheat the oven to 350°F (175°C). Roll out the dough and fit it into a pie dish.
- Pour the chocolate pastry cream into the prepared crust and bake for 30 minutes until set.
- Allow to cool before slicing and serving.
Notes
Ensure that the butter is at room temperature to create a smooth dough. You can use different types of chocolate according to your preference for a richer or lighter flavor.
