Description

Torta del Nonno, or Grandfather’s Cake, is a rich and creamy dessert enriched with chocolate pastry cream and a delightful chocolate pie dough, perfect for any special occasion.


Ingredients

  • 1 cup cream (whole
  • heavy or whipping cream at least 30% fat content)
  • 1 cup milk (whole/heavy milk)
  • 5 large egg yolks
  • 10 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 3½ tablespoons all purpose flour
  • 2½ ounces dark chocolate (good quality
  • I use one with 52% cocoa)
  • 2¼ cups all purpose flour
  • 1 pinch salt (If using unsalted butter then add ¼ teaspoon of salt)
  • ½ teaspoon baking powder
  • ½ cup granulated sugar
  • 2 tablespoons unsweetened dutch processed cocoa (sifted)
  • 1 large egg (room temperature)
  • 1 large egg yolk (room temperature)
  • ¾ cup butter cubed (room temperature)

Instructions

  1. In a medium saucepan, heat the cream and milk over medium heat until just steaming.
  2. In a separate bowl, whisk together the egg yolks, sugar, vanilla extract, and flour until smooth.
  3. Slowly pour the hot cream mixture into the egg mixture, whisking constantly.
  4. Return the mixture to the saucepan over medium heat and cook, stirring constantly, until it thickens. Remove from heat and stir in chopped dark chocolate until melted and smooth.
  5. For the chocolate pie dough, whisk together flour, salt, baking powder, sugar, and cocoa powder in a large bowl.
  6. Cut in the butter until the mixture resembles coarse crumbs.
  7. Add the large egg and egg yolk, mixing until a dough forms. Wrap in plastic wrap and refrigerate for 30 minutes.
  8. Preheat the oven to 350°F (175°C). Roll out the dough and fit it into a pie dish.
  9. Pour the chocolate pastry cream into the prepared crust and bake for 30 minutes until set.
  10. Allow to cool before slicing and serving.

Notes

Ensure that the butter is at room temperature to create a smooth dough. You can use different types of chocolate according to your preference for a richer or lighter flavor.
