Torta Caprese is a classic Italian chocolate torte, rich, flourless, and delightful for chocolate lovers.
Ingredients

- 200 g Dark chocolate
- 200 g Butter
- 1 teaspoon Vanilla extract
- ½ teaspoon Kosher salt
- 3 tablespoon Cocoa powder plus more for the top
- 5 Eggs carefully separated
- 1 ¼ cups Granulated sugar
- 1 ½ cups Almond flour
Instructions
- Preheat the oven to 350°F (175°C) and grease a springform pan.
- Melt the dark chocolate and butter together in a double boiler or microwave until smooth.
- Stir in the vanilla extract and kosher salt.
- In a separate bowl, whisk the egg yolks with granulated sugar until pale and thick.
- Combine the chocolate mixture with the egg yolk mixture, folding gently.
- Sift the cocoa powder and almond flour into the batter and fold until just combined.
- In a clean bowl, beat the egg whites until stiff peaks form, then fold into the batter carefully.
- Pour the mixture into the prepared springform pan.
- Bake for 30-35 minutes until the top has set but the center is still moist.
- Allow to cool before removing from the pan and dust with additional cocoa powder before serving.
Notes
For an added flavor, consider serving with whipped cream or fresh berries.
