Description

A refreshing Tomato Salad featuring sweet cherry tomatoes and creamy mozzarella, drizzled with a simple homemade dressing.


Ingredients

  • Fresh cherry or grape tomatoes
  • Fresh mozzarella salad pearls
  • Extra virgin olive oil
  • Garlic
  • Red wine vinegar
  • Fresh basil
  • Fresh parsley
  • Dried oregano
  • Honey
  • Salt
  • Pepper

Instructions

  1. Wash the cherry or grape tomatoes and cut them in half.
  2. If using a ball of fresh mozzarella, dice it into bite-sized pieces.
  3. In a large bowl, combine the tomatoes and mozzarella.
  4. In a separate small bowl, whisk together the extra virgin olive oil, minced garlic, red wine vinegar, honey, salt, and pepper.
  5. Pour the dressing over the salad and toss gently to combine.
  6. Add the chopped fresh basil and parsley, along with the dried oregano, and toss again.
  7. Serve immediately and enjoy!

Notes

Serve this salad immediately to prevent the dressing from making the tomatoes watery. You can substitute with larger tomatoes, just make sure to serve right away.
