- 1 pie crust
- 4 beefsteak tomatoes peeled and sliced thin
- Salt and pepper to taste
- 1 tbsp fresh basil or one teaspoon dried basil
- 2 tbsp chopped chives
- 1 cup heavy mayo preferably Duke’s
- 1 cup grated cheddar cheese
Instructions
- Preheat your oven to 350°F (175°C).
- Place the pie crust in a pie dish and pre-bake for 10 minutes.
- Layer the sliced tomatoes in the pie crust, seasoning each layer with salt, pepper, and basil.
- In a bowl, mix together the mayo, chives, and half of the cheddar cheese. Spread this mixture over the tomatoes.
- Sprinkle the remaining cheddar cheese on top.
- Bake in the preheated oven for 30 minutes or until the top is golden brown and bubbly.
- Allow to cool slightly before slicing and serving. Enjoy!
