Description

This Tomato Pie Recipe features a creamy and cheesy filling with fresh tomatoes, making it a flavorful and satisfying dish perfect for summer.


Ingredients

  • 1 pie crust
  • 4 beefsteak tomatoes peeled and sliced thin
  • Salt and pepper to taste
  • 1 tbsp fresh basil or one teaspoon dried basil
  • 2 tbsp chopped chives
  • 1 cup heavy mayo preferably Duke’s
  • 1 cup grated cheddar cheese

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Place the pie crust in a pie dish and pre-bake for 10 minutes.
  3. Layer the sliced tomatoes in the pie crust, seasoning each layer with salt, pepper, and basil.
  4. In a bowl, mix together the mayo, chives, and half of the cheddar cheese. Spread this mixture over the tomatoes.
  5. Sprinkle the remaining cheddar cheese on top.
  6. Bake in the preheated oven for 30 minutes or until the top is golden brown and bubbly.
  7. Allow to cool slightly before slicing and serving. Enjoy!
