  • 4 cups fresh tomatoes (sliced)
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1/4 cup fresh basil (chopped)
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 large egg (beaten)

Instructions

  1. Preheat your oven to 400 degrees F (200 degrees C).
  2. In a bowl, combine flour and salt. Add cold butter and mix until you have a crumbly texture.
  3. Gradually add ice water until the dough comes together. Form into a disk, wrap in plastic, and refrigerate for 30 minutes.
  4. Roll out the dough on a floured surface and transfer to a pie dish. Trim the edges.
  5. Layer the sliced tomatoes in the crust, sprinkling with salt, pepper, oregano, and fresh basil.
  6. In a bowl, mix the cheeses and beaten egg. Spread the cheese mixture over the tomatoes.
  7. Bake in the preheated oven for 30-35 minutes until the top is golden and bubbly.
  8. Let cool for a few minutes, then slice and serve warm.
