- 1/2 cup unsalted butter (cold and cubed)
- 1/4 cup ice water (more if needed)

- 4 cups fresh tomatoes (sliced)
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 1/4 cup fresh basil (chopped)
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 large egg (beaten)
Instructions
- Preheat your oven to 400 degrees F (200 degrees C).
- In a bowl, combine flour and salt. Add cold butter and mix until you have a crumbly texture.
- Gradually add ice water until the dough comes together. Form into a disk, wrap in plastic, and refrigerate for 30 minutes.
- Roll out the dough on a floured surface and transfer to a pie dish. Trim the edges.
- Layer the sliced tomatoes in the crust, sprinkling with salt, pepper, oregano, and fresh basil.
- In a bowl, mix the cheeses and beaten egg. Spread the cheese mixture over the tomatoes.
- Bake in the preheated oven for 30-35 minutes until the top is golden and bubbly.
- Let cool for a few minutes, then slice and serve warm.
Notes
For the best flavor, use ripe, in-season tomatoes. Feel free to customize the cheese blend to your taste.
