- 8 oz fresh mozzarella pearls
- or 1 cup diced fresh mozzarella cheese
- 1 large avocado
- diced
- 1/3 cup basil leaves
- chopped
- 3 Tbsp extra virgin olive oil
- 1 Tbsp balsamic vinegar
- 1 garlic clove
- peeled and pressed or grated
- 1/2 tsp fine sea salt
- plus more to taste
- 1/4 tsp freshly cracked black pepper
Instructions
- In a large mixing bowl, combine the quartered cucumber, halved cherry tomatoes, mozzarella pearls, diced avocado, and chopped basil leaves.
- In a small bowl, whisk together the olive oil, balsamic vinegar, pressed garlic, sea salt, and black pepper.
- Pour the dressing over the salad and gently toss everything together until well combined.
- Taste and adjust seasoning with additional salt or pepper if needed before serving.
