Description

  • 2/3 cup Libby’s Pumpkin Puree
  • room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • packed
  • 2 large egg yolks
  • room temperature
  • 2 teaspoon vanilla extract
  • 1 2/3 cup + 1 tablespoon all-purpose flour
  • 2 1/2 teaspoons pumpkin spice
  • 1 teaspoon baking soda
  • 1/2 teaspoon fine sea salt
  • 1 cup finely chopped chocolate bar or chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet by lining it with parchment paper.
  2. In a large mixing bowl, cream together the cold unsalted butter, granulated sugar, and light brown sugar until light and fluffy.
  3. Add in the pumpkin puree, egg yolks, and vanilla extract, mixing until well combined.
  4. In another bowl, whisk together the all-purpose flour, pumpkin spice, baking soda, and fine sea salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring just until incorporated.
  6. Fold in the finely chopped chocolate or chocolate chips until evenly distributed.
  7. Using a spoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet, leaving space between each cookie.
  8. Bake in the preheated oven for about 12-15 minutes or until the edges are set and the tops appear slightly cracked.
  9. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Make sure the butter is cold for a thicker cookie, and use room temperature pumpkin puree and egg yolks for better incorporation.
