- 1 cup cold unsalted butter
- 2/3 cup Libby’s Pumpkin Puree
- room temperature
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar

- 2 large egg yolks

- 2 teaspoon vanilla extract
- 1 2/3 cup + 1 tablespoon all-purpose flour
- 2 1/2 teaspoons pumpkin spice
- 1 teaspoon baking soda
- 1/2 teaspoon fine sea salt
- 1 cup finely chopped chocolate bar or chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and prepare a baking sheet by lining it with parchment paper.
- In a large mixing bowl, cream together the cold unsalted butter, granulated sugar, and light brown sugar until light and fluffy.
- Add in the pumpkin puree, egg yolks, and vanilla extract, mixing until well combined.
- In another bowl, whisk together the all-purpose flour, pumpkin spice, baking soda, and fine sea salt.
- Gradually add the dry ingredients to the wet mixture, stirring just until incorporated.
- Fold in the finely chopped chocolate or chocolate chips until evenly distributed.
- Using a spoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet, leaving space between each cookie.
- Bake in the preheated oven for about 12-15 minutes or until the edges are set and the tops appear slightly cracked.
- Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
Make sure the butter is cold for a thicker cookie, and use room temperature pumpkin puree and egg yolks for better incorporation.
