  • 1 cup Canned Pumpkin Puree
  • 1 tablespoon Unsalted Butter
  • 1 tablespoon Pumpkin Pie Spice
  • 14 oz Sweetened Condensed Milk
  • 1 cup White Chocolate Chips
  • 1 cup Graham Cracker Crumbs
  • optional Orange Food Coloring
  • optional Granulated Sugar
  • small Chocolate Chips

Instructions

  1. In a mixing bowl, beat the cream cheese and unsalted butter until smooth and creamy.
  2. Add in the canned pumpkin puree, pumpkin pie spice, and sweetened condensed milk, and mix until well combined.
  3. Melt the white chocolate chips in a microwave-safe bowl, stirring every 30 seconds until completely smooth.
  4. Fold the melted chocolate into the pumpkin mixture, being careful to blend without overmixing.
  5. Refrigerate the mixture for about 30 minutes to firm up.
  6. Once chilled, scoop the mixture into small balls and roll in graham cracker crumbs.
  7. If desired, add a few drops of orange food coloring to the remaining white chocolate to drizzle over the truffles for a pumpkin effect.
  8. Roll the truffles in granulated sugar for an additional texture if desired and add small chocolate chips for stems.
