  • ½ cup pure maple syrup
  • 1 + ½ tablespoon coconut oil melted
  • ¼ cup peanut butter
  • 1 egg
  • ⅓ cup cocoa powder
  • 1 tsp baking powder
  • ½ teaspoon salt
  • ⅔ cup oat flour
  • ½ cup chocolate chips
  • ½ cup walnuts chopped
  • ½ cup mini marshmallows

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  2. In a large bowl, combine the mashed sweet potato, vanilla extract, maple syrup, melted coconut oil, peanut butter, and egg. Mix until smooth.
  3. In another bowl, whisk together the cocoa powder, baking powder, salt, and oat flour.
  4. Gradually add the dry ingredients to the wet ingredients and stir until fully combined.
  5. Fold in the chocolate chips, walnuts, and mini marshmallows if using.
  6. Pour the batter into the prepared baking dish, spreading it evenly.
  7. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out mostly clean.
  8. Let cool before cutting into squares and serving.
