  • 1/3 cup almond flour
  • 1/2 tsp salt
  • 23 tbsp extra virgin olive oil
  • 2 tbsp grapeseed oil
  • 3/4 cup chicken stock
  • 3 tbsp lemon juice
  • 1/4 cup capers
  • drained
  • 2 tbsp fresh parsley
  • chopped

Instructions

  1. Dredge the cod fillets in almond flour and season with salt.
  2. Heat olive oil and 1 tbsp grapeseed oil in a skillet over medium heat.
  3. Cook the cod fillets for about 4-5 minutes on each side until golden brown.

  5. Bring to a simmer and cook for 3-4 minutes to reduce slightly.
  6. Return cod to the skillet and coat with sauce for an additional 2 minutes.
