- 1 lb. cod fillets
- 1/3 cup almond flour
- 1/2 tsp salt
- 2–3 tbsp extra virgin olive oil
- 2 tbsp grapeseed oil
- 3/4 cup chicken stock
- 3 tbsp lemon juice
- 1/4 cup capers

- 2 tbsp fresh parsley

Instructions
- Dredge the cod fillets in almond flour and season with salt.
- Heat olive oil and 1 tbsp grapeseed oil in a skillet over medium heat.
- Cook the cod fillets for about 4-5 minutes on each side until golden brown.
- Remove the cod and set aside. Add chicken stock, lemon juice, and capers to the skillet.
- Bring to a simmer and cook for 3-4 minutes to reduce slightly.
- Return cod to the skillet and coat with sauce for an additional 2 minutes.
- Garnish with chopped parsley before serving.
