  • 1 large egg
  • 1/2 cup vegetable oil OR melted butter
  • 1/3 cup milk
  • 1 teaspoon vanilla
  • 1 1/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup sour cream
  • 1 cup blueberries
  • About 1 tablespoon white sugar for the top (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the sugar, egg, vegetable oil (or melted butter), milk, and vanilla until well combined.
  3. In another bowl, whisk together the all-purpose flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just blended. Be careful not to overmix.
  5. Fold in the sour cream and blueberries gently.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full. Sprinkle a little sugar on top if desired.
  7. Bake for about 20-25 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow to cool for a few minutes before transferring to a wire rack to cool completely.

Notes

For best results, use fresh blueberries. If using frozen, do not thaw them before adding to the batter.
