Description
These Thanksgiving Doughnuts are delectably fluffy brioche dough filled with a creamy pumpkin cheesecake, perfect for the festive season.

- 2 ¼ tsp active dry yeast
- 250g whole milk

- 4 Tbsp (50g) sugar
- 565g all-purpose flour
- 1 tsp salt
- 2 eggs

- 1 tsp vanilla bean paste
- 100g unsalted butter
- at room temperature
- Neutral Oil for Frying
- 200g granulated sugar
- 1 ½ tsp pumpkin pie spice
- 280g pumpkin puree
- 450g cream cheese
- softened
- 100g powdered sugar
- ½ tsp vanilla bean paste
- 1 tsp ground cinnamon
- 1½ tsp pumpkin pie spice
- Pinch salt
Instructions
- In a bowl, combine warm milk, yeast, and sugar. Let it sit until frothy, about 5-10 minutes.
- In a large mixing bowl, mix flour and salt, then add the yeast mixture, eggs, and vanilla bean paste.
- Knead in the softened butter until smooth, then cover and let rise until doubled in size, about 1-1.5 hours.
- Once risen, punch down the dough and roll it out to about ½ inch thick. Cut into doughnut shapes and let rise again for 30 minutes.
- Heat the oil in a deep fryer or large pot. Fry the doughnuts until golden brown on each side, about 2-3 minutes per side.
- Toss the warm doughnuts in pumpkin spice sugar after frying.
- For the filling, mix pumpkin puree, cream cheese, powdered sugar, vanilla, cinnamon, pumpkin pie spice, and pinch of salt until smooth.
- Fill the cooled doughnuts with the pumpkin cheesecake filling using a piping bag.

For best results, ensure all ingredients are at room temperature before starting. Allow the doughnuts to cool before filling to maintain their shape.
