Ingredients
1 tablespoon peanut or coconut oil
1 ½ lb chicken breast boneless
skinless
cut into quarters
1 teaspoon salt
1 onion thinly sliced
2 cloves garlic minced
2 tablespoon fresh ginger minced
1 398 ml can California cling peach slices
1 tablespoon honey
2 tablespoon soy sauce
1 tablespoon fish sauce
1 tablespoon rice vinegar
1 tablespoon Thai chilli sauce
juice of one lime
1 teaspoon dried lemongrass
1 tablespoon cornstarch
1 red bell pepper cored and thinly sliced
ÂĽ cup chopped peanuts
2 tablespoon fresh cilantro chopped (or use parsley or basil)
Instructions
- Heat the peanut or coconut oil in a large skillet over medium heat.
- Add the chicken pieces and season with salt. Cook until browned and cooked through, about 10-15 minutes.
- Add the onion, garlic, and ginger to the skillet; sauté until the onion is translucent.
- Stir in the peach slices, honey, soy sauce, fish sauce, rice vinegar, Thai chili sauce, lime juice, and dried lemongrass.
- In a small bowl, mix cornstarch with a little water to create a slurry. Add to the skillet and stir until the sauce thickens.
- Fold in the red bell pepper and cook for an additional 5 minutes.
- Serve the dish topped with chopped peanuts and fresh cilantro.
Notes
For extra flavor, consider adding some fresh Thai basil or a splash of coconut milk.
