Description

Delightfully moist and flavorful Tequila Sunrise Cupcakes infused with vibrant orange and a hint of tequila, topped with a playful grenadine swirl and fresh cherries.

1/4 cup fresh squeezed orange juice

2 tablespoons tequila

2 tablespoons milk

3/4 cup salted butter

1/2 cup shortening

5 cups confectioners’ sugar

1 tablespoon tequila

1 teaspoon finely grated orange zest

2 teaspoons fresh squeezed orange juice

5 teaspoons grenadine

Instructions

  • Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
  • In a mixing bowl, cream together the unsalted butter and sugar until light and fluffy.
  • Add sour cream, vanilla extract, and finely grated orange zest to the mixture and mix until combined.
  • In a separate bowl, whisk egg whites until peaked, then gently fold into the batter.
  • In another bowl, combine flour, baking powder, and salt. Gradually add this dry mixture to the wet mixture alternating with orange juice and tequila.
  • Spoon the batter into the cupcake liners, filling them about 2/3 full. Bake for 18-22 minutes or until a toothpick comes out clean.
  • While the cupcakes cool, make the frosting by creaming together salted butter and shortening until smooth.
  • Gradually add confectioners’ sugar, continuing to mix until fluffy, then mix in tequila, orange zest, and orange juice.
  • To create the grenadine effect, pipe the frosting onto the cooled cupcakes and drizzle grenadine on top. Optionally, add orange icing color to the remaining frosting if desired.
  • Garnish with cherries and orange slices, and serve!

Notes

Make sure to let the cupcakes cool completely before frosting to prevent the frosting from melting.
