- 1 pound lean ground beef
- 1 yellow onion diced
- 3 cloves garlic minced
- 1 ½ tablespoons chili powder
- 1 tablespoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 ¼ cups uncooked long-grain white rice
- 14.5 ounces canned diced tomatoes undrained
- 4 ounce can chopped green chilies
- 3 cups beef broth
- 2 cups shredded Colby Jack cheese
- Optional toppings: shredded lettuce

Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, add the ground beef and cook until browned. Drain excess fat.
- Add the diced onion and minced garlic to the skillet and sauté until the onion is translucent.
- Stir in the chili powder, cumin, smoked paprika, oregano, salt, and black pepper. Mix well.
- Add the uncooked rice, canned tomatoes, green chilies, and beef broth. Stir until combined.
- Bring the mixture to a boil, then reduce the heat, cover, and simmer for 20 minutes.
- After 20 minutes, remove the lid and add 1 cup of shredded cheese on top. Transfer the skillet to the preheated oven and bake for an additional 10 minutes until the cheese is melted and bubbly.
- Remove from the oven, let it cool slightly, and serve with optional toppings.
Notes
Adjust the chili powder to your desired spice level. Ground chicken or turkey can be used as a substitute for beef.
