Ingredients
1 pound ground beef or turkey
1 medium onion
diced
2 cloves garlic
minced
1 packet taco seasoning (about 1 ounce)
1 can (14 ounces) diced tomatoes
undrained
1 can (15 ounces) black beans
drained and rinsed
1 cup corn (frozen or canned)
1 cup shredded cheddar cheese
1 cup sour cream
1/2 cup sliced black olives (optional)
1/4 cup chopped fresh cilantro (for garnish)
Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, brown the ground beef or turkey over medium heat. Add the diced onion and minced garlic, cooking until the onion is translucent.
- Stir in the taco seasoning, diced tomatoes (with their juice), black beans, and corn. Mix thoroughly and let simmer for about 5 minutes.
- In a greased baking dish, layer half of the meat mixture, followed by half of the sour cream and half of the cheese.
- Repeat the layers with the remaining meat mixture, sour cream, and cheese. Top with sliced black olives if desired.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
- Remove from the oven and let cool for a few minutes. Garnish with chopped fresh cilantro before serving.
