- 3 cups diced sweet potato
- cooked
- 14 oz. coconut cream
- cream only
- 1/3 cup maple syrup
- 2 tbsp coconut sugar
- 1 1/2 tsp cinnamon
- 4 egg whites
- 1/4 tsp cream of tartar
- 3 tbsp cane sugar
Instructions
- In a blender or food processor, combine the cooked sweet potatoes, coconut cream, maple syrup, coconut sugar, and cinnamon. Blend until smooth and creamy.
- Taste and adjust sweetness if necessary, then transfer the mousse to serving dishes and refrigerate for at least 1 hour to set.
- For the optional meringue, preheat your oven to 200°F (95°C). In a clean bowl, beat the egg whites and cream of tartar until soft peaks form. Gradually add the cane sugar, continuing to beat until stiff peaks form.
- Pipe or spoon the meringue onto a baking sheet lined with parchment paper and bake for 1-2 hours until dry and crisp.
- Serve the Sweet Potato Mousse chilled, topped with the meringue if desired.
Notes
For the best flavor, use fresh, good-quality coconut cream. Refrigerate the mousse for longer if possible; it enhances the texture. The meringue can be made ahead and stored in an airtight container.
