- ¾ cup brown sugar (150g)
- ½ cup unsalted butter (113g)

- 1 teaspoon vanilla extract
- Optional mix-ins: ½ cup chocolate chips (85g)
- ½ cup chopped walnuts

Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter and brown sugar until fluffy. Add the mashed sweet potato, egg, and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in any optional mix-ins if desired.
- Using a spoon or cookie scoop, drop dough onto the prepared baking sheet, spacing them about 2 inches apart.
