- ⅓ cup melted butter
- 1 cup mashed sweet potato
- ⅓ cup honey
- 3 tablespoons softened butter

Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch square baking dish.
- In a large mixing bowl, combine cornmeal, flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk together eggs, milk, melted butter, mashed sweet potato, and honey until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined, being careful not to overmix.
- Pour the batter into the prepared baking dish and spread it evenly.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- While the cornbread is baking, prepare the honey butter by mixing softened butter with a pinch of salt and honey until creamy.
- Once the cornbread is done, allow it to cool slightly before cutting into slices and serving with honey butter on top.
