4 cups pitted bing cherries frozen or fresh
1/4 cup water
1 1/2 TBSP cornstarch
1/3 cup sugar
1–2 teaspoons lemon juice to taste
1 cup flour
1 tsp baking powder
1/4 cup +2 TBSP sugar divided
3 TBSP cold butter
2 TBSP buttermilk
1 egg
Instructions
- In a saucepan, combine the pitted bing cherries, water, cornstarch, sugar, and lemon juice. Cook over medium heat until bubbling and thickened, then set aside.
- Preheat your oven to 350°F (175°C). In a mixing bowl, whisk together the flour, baking powder, and 1/4 cup sugar.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Stir in the buttermilk and egg until just combined.
- Pour the cherry mixture into a baking dish and drop spoonfuls of the biscuit topping over the cherries.
- Sprinkle the remaining 2 TBSP sugar over the biscuit topping.
- Bake in the preheated oven for 30 minutes or until the topping is golden brown.
- Let cool slightly before serving.
