  • Yield: 4 servings 1x
  • Diet: Vegetarian

Description

Delicious and crispy Summer Squash Fritters perfect for a light meal or snack during summer.

Ingredients

Scale

2 Cups of grated summer squash

1 Cup of diced onion

2 Serrano peppers deseeded and minced (optional)

3 Large eggs whisked

½ Cup of flour

½ Teaspoon of salt

½ Teaspoon of black pepper

½ Teaspoon of smoked paprika

Oil for frying

Instructions

  • In a large bowl, combine grated summer squash, diced onion, and minced Serrano peppers.
  • Stir in the whisked eggs, flour, salt, black pepper, and smoked paprika until well mixed.
  • Heat oil in a frying pan over medium heat. Scoop tablespoon-sized portions of the fritter mixture and flatten them slightly in the pan.
  • Fry each fritter for about 3-4 minutes on each side, or until golden brown and crispy.
  • Remove from the pan and place on paper towels to drain excess oil. Serve warm.

Notes

For a spicier kick, keep the seeds of the Serrano peppers. Serve with a dipping sauce of your choice.
