Description

These Summer Nectarine Crumble Bars feature succulent slices of nectarines blended with a zesty lemon touch, perfectly balanced in a buttery crumble crust.


Ingredients

  • 4 cups Nectarines (sliced)
  • 1/2 cup Granulated sugar
  • 1 tablespoon Lemon juice
  • 1 tablespoon Cornstarch
  • 1 cup Granulated sugar (for dough)
  • 3 cups All-purpose flour
  • 1 teaspoon Baking powder
  • 1 cup Unsalted European butter (cold
  • cubed)
  • 1 large Egg
  • 1 teaspoon Vanilla bean paste
  • 1/2 cup Light brown sugar
  • 1/2 cup Panko breadcrumbs
  • 1 pinch Salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a mixing bowl, combine the sliced nectarines, 1/2 cup granulated sugar, lemon juice, and cornstarch. Toss until the nectarines are evenly coated and set aside.
  3. In another bowl, whisk together 1 cup of granulated sugar, flour, baking powder, and salt.
  4. Cut in the cold, cubed butter with a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  5. Stir in the egg and vanilla bean paste until the dough comes together.
  6. Press two-thirds of the dough mixture into the bottom of the prepared baking dish.
  7. Spread the nectarines mixture evenly over the crust.
  8. Crumble the remaining dough on top of the nectarines and sprinkle with light brown sugar and panko breadcrumbs.
  9. Bake in the preheated oven for 30-35 minutes or until golden brown.
  10. Allow to cool before cutting into squares and serving.

Notes

For extra flavor, consider adding a pinch of cinnamon to the crumble topping. These bars are best served warm with a scoop of vanilla ice cream.
