These Summer Nectarine Crumble Bars feature succulent slices of nectarines blended with a zesty lemon touch, perfectly balanced in a buttery crumble crust.

- 4 cups Nectarines (sliced)
- 1/2 cup Granulated sugar
- 1 tablespoon Lemon juice
- 1 tablespoon Cornstarch
- 1 cup Granulated sugar (for dough)
- 3 cups All-purpose flour
- 1 teaspoon Baking powder
- 1 cup Unsalted European butter (cold
- cubed)
- 1 large Egg
- 1 teaspoon Vanilla bean paste
- 1/2 cup Light brown sugar
- 1/2 cup Panko breadcrumbs
- 1 pinch Salt
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- In a mixing bowl, combine the sliced nectarines, 1/2 cup granulated sugar, lemon juice, and cornstarch. Toss until the nectarines are evenly coated and set aside.
- In another bowl, whisk together 1 cup of granulated sugar, flour, baking powder, and salt.
- Cut in the cold, cubed butter with a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Stir in the egg and vanilla bean paste until the dough comes together.
- Press two-thirds of the dough mixture into the bottom of the prepared baking dish.
- Spread the nectarines mixture evenly over the crust.
- Crumble the remaining dough on top of the nectarines and sprinkle with light brown sugar and panko breadcrumbs.
- Bake in the preheated oven for 30-35 minutes or until golden brown.
- Allow to cool before cutting into squares and serving.
Notes
For extra flavor, consider adding a pinch of cinnamon to the crumble topping. These bars are best served warm with a scoop of vanilla ice cream.
